Hyson
Popular Chinese Green Tea
Overview
Hyson is one of the most famous Chinese green teas in international trade, named after a Hong Kong merchant (Hyson) who popularized it in the 18th century. It represents the standard Chinese green tea exported to Western markets for centuries.
Unlike Young Hyson (pre-Qingming), Hyson is plucked after the Qingming festival, making it more abundant while maintaining excellent quality. It was a staple in the tea trade between China and Europe.

Production
Hyson follows standard green tea production: withering, pan-frying, rolling, and drying. The larger harvest window compared to Young Hyson allows for greater production volume.
Brewing
Steep at 75-80°C for 2-3 minutes. Adjust to taste. Good for 2-3 re-infusions.
